Honey process stands between natural and wet process; where the coffee are dried without fermentation (like in wet process), neither with the outer (like in natural process).

The name for this processing method evokes sweetness and freshness.

Depends on sugar content of coffee cherries, colors of coffee parchments will vary in different appearance; whether in dark orange, red or black.

We look for the balance in sweetness and fruitiness from this method.
