Natural process – also called dry process is one the three basic processing methods for coffee.
In comparison to wet and honey process, this method is done simplier. However, to gain disirable tastes of sweetness of tropical fruits, mild acidity and balanced body; without the presence of unpleasant tastes like earthly, rotten veggies.
The progress must be done strictly from picking to drying.
Only ripest cherries meet requirements. The cherries after picked are dried on raised net beds and producers should stir often to make sure all cherries get evenly dry.
